Chocolate “callets” are designed for clean and easy melting. They come as tiny buttons that aid preparation for tempering or just adding in there solid form to baking. Allows smooth, consistent melting. Tempered and ready for use. If you wish to use for coating with a snap and gloss. Re-tempering may be required if re-melting exceeds 31°C. This is a process where the different fat solids are heated and cooled to retain the crisp clean snap and the glossy sheen. The couverture as its known comes in 3 types with differing percentages of cacao solids. Dark, milk and white. All are easy to use with differing depths of intensity depending on the solids. The higher the percentage the depth and bitterness increases. Can be used in many applications like ganaches, baking and covering.
