Made with barley grown at Rockside farm, the latest edition of 100% Islay was carefully selected from four different harvests (2007, 2009, 2010 and 2011) and the two barley varieties used during these years, Optic and Publican. slowly smoked for 10 hours with local peat cut by hand at the nearby Loch Gorm. Aged for a minimum of 9 years, the 11th edition is a beautiful marriage of 26 ex-bourbon barrels and 7 ex-sherry casks (500L). Non chill filtered, this release is bottled at 50%.
Our 100% Islay range is the worlds only Single Farm Single Malt Scotch Whisky. It represents the revival of traditional farm distilling; growing our own barley before malting, distilling, maturing and bottling every bottle of our 100% Islay range on site.
50% abv, 70cl bottle. non chill filtered and natural colour.
